Baja Soup

Taco night in a bowl!

3 tbsp. minced garlic
1 whole medium onion, chopped
1 large red bell pepper, chopped

Sauté these in olive oil, then add:

2 quarts chicken stock
3 tbsp. dried oregano
2 tsp. cumin
2 tsp. paprika
Sea salt to taste
Black pepper to taste
1 small butternut squash, peeled and diced
3 medium tomatoes, peeled and diced
2 ears of fresh corn, sliced off the cob
1 ½ cups basmati rice
2-3 cups of cubed roasted chicken (leftover rotisserie chicken works wonderfully)
Simmer till squash and rice are tender.


Top with crushed tortilla chips, chopped avocado & tomato, sour cream & chives, cilantro, and a squeeze of fresh lime juice.
